For best results, you want to use the clams the same day you purchase them. Clams should not smell fishy, they should smell briny like the ocean. Clean your clams thoroughly before use. Follow these simple steps to make sure you have squeaky clean clams:


If the fresh clams route is sounding a bit overwhelming, rest assured you can use canned clams. I think that fresh clams taste better and have a better texture, but canned clams will absolutely work. Use cup of canned clams, chopped. You can save the juice from the cans to use in the recipe as well.


I followed the recipe except for two things. One, I like a little bacon in my chowder, so I fried 3oz of bacon and used the drippings to cook the onions, leeks, and celery. The butter/flour combo baked in the oven was a first for me and it seemed to work just fine. The end result was a little thick, but that was easy to solve by adding some milk. The second change is why I am taking the time to write a comment.


Since there were no cows in the region, legend has it that Orion and Rolland were nourished on clam chowder. They attended the first school in Seattle in the home of Reverend David Blaine (1824-1900) and his wife Catharine Paine Blaine (1829-1908), who taught the pupils. Later Orion and Rolland became some of the earliest students at the Territorial University.


Clam chowder (known as "clam chowda" in the Boston area) comes in two popular varieties, New England (which is cream based) and Manhattan (which is tomato based). Clam chowder is an old fashioned New England comfort food that goes well with any type of seafood dish. A few of my favorite things to serve it with are these Maryland-style crab cakes and these hot buttered lobster rolls!


Sourdough is one of the best breads to serve with clam chowder because of its soft center and firm crust. A bread bowl is the perfect vessel for chowder! You can usually buy them at your local bakery or grocery store.


Note: you may be asking why I drain the canned clams and using bottled clam juice instead. I prefer it this way because I like to make sure there are no shell remnants left behind from the canned clams! 2ff7e9595c
